Nap Central & Chili-Rubbed Tilapia

I have a cold. I guess what this means is that my body wants to sleep sleep sleep. I woke up this morning at 10 am (we have 12:30 church), showered, put some clothes on, and then promptly fell back asleep until 11:30. I got up, did my hair (not so nicely), put on my makeup, and got dressed. We were late to church, which is pretty sad when it's 12:30 church (and without kids to boot!). During fast and testimony meeting, I felt really drowsy. And I had a hard time hearing - my ears were plugged from my cold. I also almost fell asleep on Holland's shoulder a few times. (No worries. I still picked up a few things from fast and testimony meeting.) After sacrament, I told Holland I was going out to the car to take a nap. I made my way through the halls, declining handshakes left and right (but seriously, I had to deny people handshakes SEVERAL times), and found my way to the backseat of the car with a blanket and proceeded to sleep until about 15 minutes to the end of church when I got cold. When we got home from church, I laid on the couch with a blanket cave for Buttons and promptly fell asleep again until Holland woke me up for dinner. If you're keeping track, people, that's 3 naps for one day. Record.


On a different note, I wanted to post about a recipe we tried today that I thought was really good. It was chili-rubbed tilapia. We tried tilapia earlier this week to see if it was a type of fish we could eat (we're not really fishy people). We determined it was, so we've been looking up different ways to cook it. Last time we did a lemon/garlic one, which was pretty basic fish-flavor. Today's was a bit different and SUPER easy. I got the recipe from here.

What You'll Need (for 2 people):
2 tilapia filets
2 tablespoons chili powder
1/2 teaspoon garlic
1/4 teaspoon salt
2 tablespoons oil

Mix up the seasonings together and then rub it on your tilapia. Heat oil in non-stick skillet on medium-high heat. Add the fish and cook until flaky, gently turning halfway, 5-7 minutes total.

That's it. You'll notice in the recipe, they use asparagus as well and more seasonings. And more tilapia. We didn't have any asparagus, so we just did steamed veggies. And since we were only cooking for 2 people, there was extra tilapia rub, so we saved that for next time.

So easy and so delicious. Try it sometime if you like tilapia. Or even if you don't. Promise it's tasty. And to prove it, even Buttons ate it and she doesn't like human food.


Side Note: This is the firs time we've put our plate on the floor to let Buttons eat off of it. It's not a common occurrence in our household.
